DEFINITION
The syndrome of the Chinese restaurant is a set of symptoms that appear after eating Chinese meal and that there seems to relate to the glutamate ingestion monosódico (GMS) that is a stimulating additive of the flavor and very related and used in the Chinese meal.
CAUSES
It seems quite clear that the causer is the ingestion of the glutamate monosódico but only it happens in certain persons predisposed to present this picture and not to the whole population, then it looks like more a personal intolerance than a poisoning for the dose. The glutamate monosódico is similar to one of the neurotransmitters (glutamate) more important than the brain and the cause can be this.
SYMPTOMS
- Sudden facial reddening,
- Pulsatile headache,
- Profuse Sudoración,
- Sensation of drowsiness and heat about the mouth,
- Pain and oppression in the thorax.
DIAGNOSIS
If the patient presents the proper symptoms of the syndrome after or during a meal in a Chinese restaurant it is possible to presume the diagnosis. If it performs immediate form it is possible to observe a cardiac arrhythmia with tachycardia and alteration of the pulmonary ventilation.
Sometimes it is possible to verify after a reexhibition with glutamate monosódico (GMS) to progressive doses (100 mg, 200 mg) until the patient presents the same symptoms. Thus it is possible to verify a diagnosis and a concrete cause.
TREATMENT
In most of the cases it is not precise to treat the symptoms since they autolimit themselves in minutes and yield alone. If they persist, it talks each other like an allergic reaction with Adrenaline, antihistamines and corticoids, controlling the cardiac frequency and rhythm and treating the same ones if they falter.
