DEFINITION
The allergy to the anisakis or anafilaxia is an answer of rejection of our organism opposite to a certain substance (alérgeno) with that we contact principally for consumption, but also it can happen for contact or even for inhalation. The anisakis has diverse proteins that are capable of producing allergic sensitizations.
CLINIC OF THE ALLERGY TO THE ANISAKIS
The most frequent symptoms and before which it is necessary to come to the specialist are: eruption, cutaneous itch and respiratory difficulty. Sometimes the picture is more intense with descent of arterial tension and loss of conscience.
Not always it happens of immediate form after eating infected fish, they can spend hours from the contact up to the appearance of symptoms.
DIAGNOSIS
If the clinic and the association of cause effect (to eat fish and allergy) could be had verified by them or to suspect, a few allergic tests must do in prick test to themselves in the skin, which is quite trustworthy. On the other hand an analysis is realized in blood of specific IgE to anisakis simply, that if it is very high (> 20 UI/ml) confirms the diagnosis, and if it is lower it can be suspected and in accordance with the cutaneous test and the clinic, also confirm the diagnosis.
HOW IS IT POSSIBLE TO PREPARE
General recommendations (fish and cefalópodos) in the diet:
Not to eat raw fish, anchovies in vinegar or fish of Japanese meal.
Examination of the fish before cooking it to detect parasites and, if they are present, to reject it.
The fish owes eviscerar to avoid the massive larvae step to the muscle.
The fish must freeze to-20ºC for 3 days or cooking to 60th C during 10 minutes, to destroy the larvae.
Not to eat fresh fish or of the area of the head, without freezing.
It is necessary only to eat the part of the loins, after the freezing.
The crustacean seafood (Lobster, prawn, shrimp, etc) can be the same way contaminated.
The bivalve seafood (Oyster, clam, mussel) it is very strange that they could be contaminated.
